After a career beginning in traditional French training with renowned chefs from around the world and culminating in several of his own restaurants, he has come full circle and is now focusing on the ingredients by working directly with farmers and ranchers to emphasize their products instead of the preparation. His focus is to now teach about what he calls "Western American Food", which consists of quality, local, healthy ingredients straight from the land and full of natural flavor.
